How to make yogurt at home?. To make yogurt you'll need whole milk, yogurt that contains active cultures (bacteria) as a starter and a thermometer.
For a gallon of milk you'll need 2 to 3 cups of cultured yogurt to be added as a starter.
Cultured yogurt is the one that contains active cultures. It can have 1 to 5 cultures.
Bring milk to boiling in a big pot, stir it and watch it not to rise. It just needs to rich the boiling temperature. Be careful not to burn it to avoid sticking in the container.
Ones milk is boiled let it cool down to 135 - 140 degrees Fahrenheit (57 -- 60 C).
Let the starter yogurt sit at room temperature while you're waiting for the milk to cool. This will prevent it from being too cold when you add it in.
Then you need to bring the starter (yogurt) temperature to the milk temperature by adding milk to the yogurt while stirring.
After you mixed the yogurt with same quantity of milk to equalize temperature add the mixture to the milk and keep stirring.
Keep the yogurt warm and still to encourage bacterial growth. You have to keep the temperature of the mixture for at least 6 to 7 hours for the yogurt bacteria to grow.
There are different techniques to keep it warm. The easiest one is to cover it with blankets. If it is a winter time you can place it on top of a heating vent. Some people use an oven and turn the light on for a heating source.
Refrigerate the yogurt. Place the yogurt in your fridge for several hours before serving.
